Allspice Crumb Muffins

Yummy MuffinsWe live by the budget in our house, we have a grocery budget, a dining out budget, a car/gas budget, and even a “spending on your self budget” (basically an allowance for grown-ups. I work well this way, I know what I have to spend and it helps us to not fight about money. We usually have a large spending savings going too (Hello Disneyland anyone!). Keeping a family of five feed on our budget can sometimes be challenging but I don’t go over, okay last month I went 38 cents over budget. But I have become a budget expert! Here is what it means for grocery shopping, #1 use a list! # 2 make a meal plan #3 stick to it! It also means searching the internet for recipes to add to said meal plan using all ingredients that I already have in the house so I can plan some fun meals. That is exactly what I found in this recipe from Brown Eyed Baker . The perfect, crumbly, you already have everything in your pantry to make this, muffin recipe!

Makes 12 muffins

For the Streusel:

  •  ½ cup all-purpose flour
  • ½ cup light brown sugar
  •  ½ teaspoon ground allspice
  •  5 Tablespoons cold unsalted butter, cut into bits

For the Muffins:

  • 2 cups all-purpose flour
  •  ½ cup granulated sugar
  •  1 Tablespoon baking powder
  •  ½ teaspoon ground allspice
  •  ¼ teaspoon salt
  •  ¼ cup light brown sugar
  •  1 stick (8 Tablespoons) unsalted butter, melted and cooled
  • 2 large eggs
  •  ¾ cup whole milk
  •  ¼ teaspoon vanilla extract

1. Mix together the flour sugar and allspice for the streusal topping. Cut in the butter, set aside until ready to use.

2. for the muffins, mix together the first 6 ingredients. Beat eggs in a separate bowl, add butter milk and vanilla. Mix into dry ingredients until just combined.

3. Scoop batter into a muffin pan that has been lined with paper cups. Top with streusal, go ahead and use it all.

4. Bake at 375 degrees for about 20 minutes. Cool slightly before you try to pop these bad boys into your mouth!

5. Eat and enjoy!
