Marshmallow Flower Cupcakes

Marshallow cupcakesHappy Birthday Jordan! Yes, it is my oldest daughters birthday today, and she is 10. I only have one kid left in the single digits. She has said for years that she would like to be a florist when she grows up. So we had a flower shop birthday party and each child got to learn how to make their very own flower arrangement. Of, course I had to keep with the theme and so we made these delicious and pretty flower cupcakes. They were a hit!

Recipe and instructions found at Betty Crocker

  • 1 box Betty Crocker White cake Mix- plus ingredients to make, on the box
  • 2 containers Betty Crocker FLuffy White Icing
  • 24 Large Marshmallows
  • Colored Sugars
  • 24 Smarties

1. Make cupcakes according to directions on box, set aside and cool.

2. Top with icing.

3. Spray kitchen scissors with some cooking spray to avoid sticking and cut each marshmallow into 5 pieces. Sprinkle generously with sugar, place on cupcakes,with a smartie the middle.

4. Eat and Enjoy!

Vanilla Cupcakes

CupcakesWhen a birthday party is somewhere other than a home, it is nice to make cupcakes so that you don’t have to worry about forks and plates. I have found I have been making cupcakes quite a lot lately. Much more than I will make an actual layer cake. Making plain vanilla cupcakes adds a bit of fun because you can add whatever you want to decorate and everything will taste good. Be creative, Have Fun!

Cake recipe from Allrecipes

  •   1 1/4 cups all-purpose flour
  •   3/4 teaspoon baking soda
  •   1 pinch salt
  •   5 tablespoons butter, cut into pieces
  •   2/3 cup milk
  •   1 cup white sugar
  •   2 eggs
  •   1 egg yolk
  •   1 teaspoon vanilla extract

1. Line 12 muffin tins with cupcake liners. Pre heat oven to 350 degrees.

2. Melt the butter and milk together in saucepan just until butter has melted, set aside.

3. In mixer bowl beat together the sugar, eggs, yolks, and vanilla until creamy. Add dry ingredients and beat until combined. Slowly beat in the milk/butter mixture. Scoop into prepared pans.

4. Bake for 20 minutes.

5. Frost, with frosting of your choice.

6. Eat and enjoy!

Gingerbread Cupcakes

Gingerbread cupcakesHere is the recipe that I promised you all yesterday. Not quite as good as the red velvet but quite yummy and festive to boot!

Recipe adapted from Allrecipes

  •  5 tablespoons unsalted butter, softened
  •  1/2 cup white sugar
  •  1/2 cup  molasses
  •  1 egg
  •  1 egg yolk
  •  1 1/4 cups all-purpose flour
  •  1 tablespoon Dutch process cocoa powder
  •  1 1/4 teaspoons ground ginger
  •  1 teaspoon ground cinnamon
  •  1/2 teaspoon ground allspice
  •  1/2 teaspoon ground nutmeg
  •  1/4 teaspoon salt
  •  1 teaspoon baking soda
  •  1/2 cup hot milk
  • Cream Cheese Frosting
  •  4 tablespoons unsalted butter, softened
  •  4 ounces cream cheese, softened
  •  1 1/3 cup sifted confectioners’ sugar
  •  1/2 teaspoon lemon extract

1. Pre-heat oven to 350 degrees and line 12 muffin cups with liners.

2. Cream together the butter, sugar, molasses, egg and egg yolk until combined. Beat in remaining dry ingredients and then hot milk.

3. Scoop into prepared muffin tins and bake for 20 minutes. Cool before frosting.

4. To make frosting beat together butter, cream cheese and lemon extract. Add icing sugar 1/3 cup at a time. Pipe onto cupcakes.

5. Eat and Enjoy!
