Caramel Apple CupcakesIt is time for The Secret Recipe Club

Yes, I know how time flies, and must say this is the quickest I have ever made my chosen selection. I was assigned From Chapelhill to Chickenville this time around, and I think I made my assignment about two days later. After reading through every single recipe I finally decided to give these Caramel Apple Cupcakes a try. They were delicious! Even my husband, a I would rather have chips than a dessert sort of guy, really liked them. I tried to whip that icing up into a frosting but mine still turned into more of a glaze but hey that was one yummy glaze and the caramel portion of this recipe makes your house smell divine. All my kids came in from the park proclaiming the house smelt like Christmas. Make these, enjoy these, I highly recommend!

  • 1 boxed cake mix pus eggs milk, oil called for on box-Aimee used white, I used yellow as I already had one
  • 2 cups peeled and diced apples
  • 1 lb light brown sugar
  • 1 cup heavy whipping cream
  • 1/2 tsp baking soda
  • 1/2 cup butter

1. Make cake according to package directions, stir in diced apples. Bake according to times on box.

2. To make icing melt together the brown sugar and whipping cream. Bring to a rolling boil. Boil for an additional minute, add baking soda, boil another minute. Remove from heat. Add butter but don’t mix it in, cool.

3. Beat frosting until desired consistency is reached. spread onto cooled cupcakes.

4. Eat and enjoy!

BBQ Beef Shepard’s Pie

BBQ Beef Shepard's PieTime for another round of The Secret Recipe Club! First I’d like to say a warm thank you to Debbi our brand new hostess, our little club wouldn’t be possible with out those few extra folks willing to do a little extra work! Although Angie , you will be missed! This month I got the pleasure of receiving Steak and Potatoes Kinda Girl, I was excited because that is exactly how  I would describe myself. As per usual there were just far too many great recipes to choose from, I gotta admit, picking the new recipe is my favorite part. I finally decided on the BBQ Beef Shepard’s Pie. We have a Shepard’s pie recipe that we use and love so I thought it would be nice to change it up a bit and as a special bonus this one doesn’t bake, so on these super hot summer days it was a perfect comforting dinner without heating up the whole house. Thanks Desi!

  • 1 lb lean ground beef
  • 1 (11-oz) can whole kernel corn with red and green peppers
  • 1 (4 oz) can chopped green chiles, undrained
  • 1 cup barbecue sauce
  • salt and pepper to taste
  • 1 1/2 lb baby red potatoes, unpeeled
  • Butter and milk, for mashing potatoes
  • 1/4 cup sliced green onions (about 4)
  • 1/2 cup shredded cheddar cheese
  • 1 tbsp ranch dressing
  • 4 slices bacon, cooked until crisp and crumbled

1. Cook ground beef in large skillet until browned, drain. Add corn, green chiles, BBQ Sauce and salt and pepper. Bring to a boil. Reduce heat to low, continue to heat on low until potatoes are done.

2. Cook potatoes until tender in boiling water. Drain and mash with butter, milk ans salt and pepper. Stir in green onions, cheddar cheese, ranch dressing and bacon.

3. Scoop meat mixture on to plate and top with potatoes.

4. Eat and enjoy!

Potato Pancakes

Potato PancakesThis month’s Secret Recipe Club assignment was Thrifty Veggie Mama ! I had a great time looking around her site looking for that delectable recipe that I would eventually pick. I was going to make the Roasted Butternut Squash and Sweet Potato Lasagna however summer decided to produce a heat wave, and alas I did not want the oven on. Back to the drawing board as they say now to find a recipe I can cook on the stove top. Potato Pancakes were perfect, I whipped them up for a quick-lunch for  the kid’s and me , served with a side of snap peas and crackers. They were a huge hit, and besides actually grating the potatoes it was a super quick recipe!

  • 4 cups shredded potatoes
  • 2 T bread crumbs
  • 2 eggs
  • salt
  • pepper
  • Sour cream and Applesauce for serving
1. Mix all ingredients together. Heat a small amount of oil in frying pan and scoop spoonful of mixture use back of spoon to spread it out. Flip when first side is browned and cook second side.
2. Serve with Sour Cream or Applesauce ( I preferred the sour cream).
3. Eat and enjoy!
